Coconut, Cream Cheese, Vanilla pudding Dessert

This is so Yummy! Need I say more?

Mix 1 C. flour, 1 cube soften butter, ½ C. chopped walnuts.
Pat down in a 9x13 baking pan. Bake 20 min. @350. Let cool.
Mix together: 2 small packages vanilla instant pudding, 3 C. milk.
Stir until thickened. Add 8 oz soften cream cheese, 1 C. coconut.
Pour over cold crust. Then spread 8 oz carton non-dairy whipped topping. Top with toasted coconut. Serve chilled.

Orzo with Feta and Tomatoes

I tried this the other day and we loved it. I saw it in 30 Minute Meals with Rachael Ray and It looked so good. Well it was really good, easy to make and the kids loved it. It is an easy pasta dish that you can take to parties. It is also easy to double this recipe for a large group.

Cook Time 10 min. Yield 4 servings as a side dish

1/2 pound orzo
Salt
2 tablespoons butter
1 cup feta cheese crumbles
A handful of parsley leaves, chopped
1/2 pint grape tomatoes, halved
Freshly ground black pepper

Heat water in large sauce pot to boil and add pasta, cook to al dente.
Melt butter in the pot while still hot and combine with feta. Add cooked pasta to feta butter and toss with parsley and tomatoes, season with a little pepper.

Chicken Tortilla Soup

This is one I got from Angela Giles. It has become one we love. I just made it yesterday and we ate it all up.

1 can chicken broth (I use 1/2 box Chicken stock)
1 can condensed cream of chicken soup
1 can condensed cream of potato soup
1-1/2 c milk
2 c cubed chicken (Cooked)
1 can mexicorn
1 can chopped green chilis
1 onion chopped
1 clove garlic finely chopped

6-8 flour tortillas cut into 1 1/2 inch strips to fry up in oil as chips.
1-1/2 c shredded cheddar cheese.

In a large pot cook onion and garlic (until onion is clear). Add chicken, broth, and soups. Add the corn, chilis mixing well. Bring to a boil. Reduce heat; simmer, uncovered for 8-10 minutes. And enjoy with cheese on top and your home made chips.

Chocolate Fondue

1 cup semisweet chocolate chips
1 cup heavy cream
1/2 cup light corn syrup

In sauce pan melt the three ingredients and let it come to a light boil. Then it is ready for your fondue. It is good with bananas, strawberries, marshmallows, and angel food cake, or pound cake. Can also use it as ice cream topping.
